No Bake Coconut Almond Oatmeal Bites

Ingredients
  

  • 1 cup chopped pitted dates
  • 3/4 cup roasted unsalted almonds
  • 1/4 cup quick cook oatmeal
  • 1/3 cup unsweetened shredded coconut

Instructions
 

  • In a food processor, add the almonds and pulse a bit to break them up into pea sized pieces. 
  • Turn it on, then add the dates a couple pieces at a time and keep blending until it is all crumbled.
  • If it balls up add a 1-2 tsp water, and the ball will break into a paste.
  • Using a spatula, scrape out the mixture into a bowl.
  • Add the oatmeal, and most of the coconut. (Keep the rest of the coconut to roll them in at the end)
  •  Mix well by hand, this will be a little messy :)
  • Wash your hands because hell, I'm sure you need to at this point. Then take small amounts and roll in your palms till it becomes a ball ( a little smaller than a golf ball).
  • Then roll around in the shredded coconut, that way you get more yummy coconut and they won't be sticky at all on the outside.
  • Cover, chill and serve! (if they even last that long)
